Welcome to my new Cheers to Our Health segment! Here we can share some recipes, ideas, and tips with each other that will support us in our Later Life health journeys. As we grow older, health is a main concern and one of the best ways to support our health is through our food choices and exercise, right? We all know this, but it’s so challenging to find nutritious alternatives, particularly with the demands of our busy schedules and the constant temptation of convenience foods.

This week, I'm sharing a gluten-free, healthy, and quick recipe for chicken with tomato-caper sauce from the Taste of Home Mediterranean Made Easy cookbook. Not only is it delicious, but it also makes for great leftovers! To simplify the process, I opted for a rotisserie chicken, using about 3 oz per serving.

Quick Chicken in Tomato-Caper Sauce

Makes 4 servings.

-About 3 cups meat from a rotisserie chicken
-1 Tbsp olive oil
-1 onion, chopped
-3 garlic cloves, minced ( or 3 tsp of minced jar garlic)
-2 cans diced tomatoes, undrained (low or no-salt)
-6 oz baby spinach
-2 Tbsp drained capers (or chopped green olives)
-2 Tbsp minced fresh basil (or 2 tsp dried basil- I used this)
-1/4 tsp cayenne pepper
-1/2 cup shredded part-skim mozzarella cheese
-1/2 cup grated Parmesan cheese

1. Heat oil in a skillet on medium-high. Add onion - cook and stir until tender. Add garlic - cook a minute. Stir in tomatoes, spinach, capers, basil, and cayenne pepper. Cook covered 5 minutes. Add chicken - cook another 5 minutes and check to make sure chicken is hot.

2. Sprinkle with cheeses. Remove from heat, cover and let it sit until the cheeses melt.

1 serving: 392 cal, 16g fat (5g sat fat), 111mg chol, 545mg sod., 17g carb (10g sugars, 5g fiber), 45g protein.
